This week has been a whirl wind. One of those weeks where I didn't have time to prepare meals on my day off and although I would love to think I have all the time in the world, I do not.
Mothers... Full time workers... UNITE! ... There is just not enough time in the day.
Well, in light of the Candida diet that Denise did, and the not-having time conundrum, I thought I would give you a recipe for a delicious easy-to-make side that is gluten and sugar free. YUM :) Yes, Easy can be healthy!!
Drum Roll please:
Dill-Mustard Vinaigrette
INGREDIENTS:
1/4 c. white vinegar
2 T spicy mustard
1 T granulated garlic
10 drops stevia
1 t salt
1/2 t black pepper
1 T Dill weed
(unless you are like me and lloovvee dill. So sometimes I use up to as much as 3 T. Delicious)
Mix the above ingredients with a combination of some or all:
Cucumbers
Absolutely love our Garden grown Cucumbers. They taste so much better than the bland store bought ones. Raised Gardens with turkey poop fertilizer make wonderful crops! |
Jalepenos
Onions
Tomatoes
Scallions
White beans/ Garbanzos
Basil
Oregano
This dish is wonderful cold, as a side or as just a snack and takes literally 10 minutes to make.
Cut, toss, and go. :)
